Creamed Lentil and Spinach

Spinach, fresh, 650 grams (remove)Lentils, 1 cup (remove)Onions, raw, 1 small (remove)Red Ripe Tomatoes, 1 Italian tomato (remove)Garlic, 4 cloves (remove)Ginger Root, 4 tsp (remove)Jalapeno Peppers, 2 pepper (remove)Salt, 2 tbsp (remove)Olive Oil, 2 tbsp (remove)
Wash and drain spinach. Wash and place the lentil in a pressure cooker. Add spinach, chopped garlic, ginger and peppers. Add salt and three cups of water. Cover the cooker and cook at high heat for first 10 minutes and then lower temperture. Keep cooking for another 10 mintues. turn off the heat and keep the cooker covered until the steam pressure is depleted.Open and puree the lentil and spinach withan electric hand blender.
Meanwhile heat oil in a small pan and brown chopped oinions ,add diced tomoto , ccok for 5 minutes and add to pureed Lentil and spinach mix. Serve with naan or pita bread.
