Spicy Swiss Chard with Lemon

Ingredients
2 tsp olive oil16 c trimmed Swiss Chard (about 2 lb)1/4 to 1/2 tsp crushed red pepper3 garlic cloves, minced1 TBSP fresh lemon juice1/8 tsp salt
Directions
Seems like a ton of chard? Don't worry; it will cook down.
1. Heat oil in a large Dutch oven over medium-high heat.
2. Add chard; saute 1 minute or until slightly wilted.
3. Stir in crushed red pepper and garlic. Cover and cook 4 minutes until tender, stirring occasionally.
4. Uncover and cook 3 minutes or until liquid evaporates.
5. Stir in lemon juice and salt.

Yield: 6 servings (1/2 c each)

    Loved it! Didn't have crushed red pepper, used Mrs Dash Southwest Chipotle instead. Our garden is producing tons of chard this year. Hubby and 3 yr old grandson both loved it too. - 7/9/11
