4 medium zucchini (cut in 1/4 inch thick circles)2 can sweet yellow corn (drained)1/2 onion (cut in small pieces)4 cloves garlic (minced or pressed)2 tbsp extra virgin olive oilsalt and pepper to taste1/2 cup mexican four cheese blend
add olive oil to hot skillet, add onion and garlic and reduce heat to medium. once onion and garlic are sauteed, add zucchini and saute for 5 minutes on high. add corn and cook entire mixture until corn is soft. salt and pepper to taste. add cheese, cover and turn off heat
