mushroom quinoa pilaf

Ingredients
1 tbsp sunflower oil3 tbsp chopped shallots3 tbsp minced garlic1 tbsp fresh sage1 1/2 C chopped mushrooms1 C vegetable broth + 1/4C water
Directions
1. sautee the shallots and garlic in the oil on medium heat, for about 5 minutes. then add the sage and mushrooms, season with a pinch of sea salt, continue to sautee for another 5 minutes
2. add the vegetable broth and the water and the quinoa and simmer for about 15 minutes, until all the liquid is absorbed.
3. let it sit for five to ten minutes to allow all the flavors to infuse the quinoa, as well as to let it cool a little! then fluff with a fork and serve!

makes 3 entree sized servings, or 5 side-dish servings!
