Omelette w/ Cheese, Salsa, Avocado

Egg white, 1 servingEgg, fresh, 2 largeOlive Oil, 1 tbspLa Victoria Thick 'N Chunky Salsa 2 tbspOnions, raw, 2 tbsp choppedAvocados, California (Haas), .25 fruit without skin and seedsGouda Cheese, 1 ozMonterey Jack Cheese, Reduced Fat, Organic Valley, 1 slice
Makes 1 serving
1. Prep:
* Cut up some onions so you have a small handful.
* Shred the gouda cheese.
* Cut up the avocado.
2. Put some olive oil in a frying pan.
3. Add just a bit of sea salt & fresh pepper.
4. Turn it on medium and add the onions.
5. When onions are a little soft, add the salsa. Cook until soft and warm.
6. Remove the onions & salsa from the pan and set aside.
7. In a mixer, add two eggs and then only egg white from the 3rd egg. Mix it until a little light.
8. Pour mixed eggs in frying pan and put on a lid, cooking it medium-low.
9. When the eggs get firm around the edges, flip the eggs, trying not to break them up as much as possible. Cook the eggs through.
10. Again, flip the eggs and then quickly spread and sprinkle the cheese on top and replace the lid. Cook on low until cheese melts a bit.
11. Presentation: Put the omelette on one side of the plate, the avocado on the other, and the salsa/onion mix in a straight line between the two halves.
