Hamburger Buns, Gluten Free

Ingredients
3/4 cup rice flour1/4 cup potato starch1/2 cup tapioca starch2 teaspoons baking powder1/2 teaspoon xanthan gum1/2 teaspoon salt1 tablespoon sugar2 eggs1/3 cup oil1/2 cup milk or almond breeze
Directions
Sift dry ingredients separately and then mix wet ingredients thoroughly before adding the wet to the dry. Spray parchment paper lined cookie sheet and baking rings with Pam. Put 2 large spoonfuls of batter in each ring and make sure rings are not close together. Sprinkle with sesame seeds or cheese and bake immediately for 13-15 minutes. Should make 5 or 6 buns. Recipe can be doubled. Don't undercook or they will fall when cooling. When cool enough to touch, remove from baking rings and let cool completely on a baking rack.

Variation: Add 1 cup grated cheddar cheese. For hot dogs: add 1/4 to 1/2 teaspoon more of xanthan gum to the batter and on a greased parchment paper lined cookie sheet, spoon batter into an oblong shape about 5 inches long. Sprinkle with sesame seeds and bake immediately. Let cool on rack after baking. After completely cool, wrap individually in parchment paper and then saran wrap and place in a freezer bag and freeze. Remove one as needed and thaw. Can be microwaved for 15-20 seconds just to warm them up.
