Molasses Granola Bars

Ingredients
2 cups rolled oats1/2 cup packed brown sugar1/4 cup wheat germ1/4 cup ground flax seed1 tsp ground cinnamon1 cup whole wheat flour1/2 cup raisins1/4 cup dried cranberries1/4 cup dried unsweetened coconut1/4 cup unsalted sunflower seeds1/4 tsp sea salt1/2 cup Canola or Sunflower oil1/2 cup fancy molasses1 tbsp Lyle's Golden Syrup (optional)1 egg, beaten2 tsp vanilla
Directions
You can easily swap out different ingredients for whatever you prefer or happen to have on hand, such as flax seeds, nuts, dried apricots, currants, or you could even use honey instead of brown sugar - or oat bran instead of wheat germ or apple sauce instead of some of the oil...

Combine all the dry ingredients in a large bowl. In a small bowl or glass measuring cup, miix the oil, egg, molasses and vanilla together and add to dry ingredients, stirring well until all is combined - if it is a very dry or crumbly, you can always add a few drops of cold water and continue mixing until it all comes together. Pour mixture into an 8" x 8" pan and flatten out evenly with a spoon. Bake at 350 for 30 minutes, or slightly less if you prefer them chewier. Let them cool for about 5 minutes, then cut them into small squares - I cut them to be tiny, about 1" square and ended up with 36 servings.

    I made mine with the honey instead of brown sugar and used more cranberries, no raisins, added walnuts and sugar free mini choco chips.

    I doubled this recipe and put it in a 2 qt. rectangle casserole. I used Maple syrup in place of Lyles Golden syrup. Thinking honey would be ok too. I used ground flax seed in place of the wheat germ, so lots of flax seed. It's very tasty and filling. My husband and son love it too. Will make again. - 3/26/13
