Rhubarb Muffins with Applesauce

Ingredients
1 1/4 c. whole wheat flour1 1/2 tsp. baking powder1/4 c. splenda1/4 c. splenda brown sugar blend1 1/2 c. diced rhubarb1 large egg1/2 c. milk, skim1/4 c. applesauce1 tsp. almond flavouring, or to tastewhite or powdered sugar for top
Directions
Mix Dry ingredients

Beat egg, add milk, applesauce and almond flavouring

Pour egg mixture over dry ingredients and stir to moisten

Fold in rhubarb

Bake 375 for 20 minutes

Dip tops while hot in sugar, or spring=kle tops with sugar before baking

Yields 12 muffins

    Saw come rhubarb in my grocery and brought it home not knowing what I'd do with it. After searching recipes, I tried this one with a few modifications (flax meal, wheat germ and blueberries added) and the muffins were very good. I split them and toast one for breakfast. - 3/23/11

    This was my first recipe sub-ing splenda for sugar and I do not like it! If it weren't for the splenda they would be great. - 5/28/11
