Low Carb Mushroom Coconut Chicken

* Chicken Leg, 4 unit * Olive Oil, 1 tbsp * Butter, unsalted, 1 tbsp * Onions, raw, .5 cup, chopped *Baby Portabella Mushrooms, 1 cup sliced * Garlic, 3 clove whole * *A Taste of Thai Coconut Milk .5 can * *Polaner's Strawberry Preserves-- No Sugar Added, 2 tbsp * *Kikkoman Lite Soy Sauce, 4 tbsp
Use large heavy skillet or dutch over on stovetop over medium heat. Melt butter and olive oil add chicken legs and brown on all sides. Remove from pan, add onions, garlic and mushrooms. Cook turning frequently until onions are well browned. Add coconut milk, strawberry jam and soy sauce. Reduce heat to slow simmer and cook for one hour turning about every ten minutes.
