Ingredients
4 cups of flour2 tsp. of baking powder1.5 tsps of baking soda1 tsp of salt2 cups of granulated sugar2 sticks or 1 cup of butter2 tsp vanilla extract4 large eggs, at room temp2 cups of lowfat buttermilk
Directions
Sift dry ingredients, with exception of sugar. Cream butter and sugar, add eggs, vanilla and finally buttermilk. It will appear curdled. Then, add dry ingredients in 3 batches until just incorporated. Cook around 35 to 45 minutes in a 350 degree oven. Make it as a cake, or make 24 cupcakes.
