Perfect Chocolate Chip Cookies

1 c. earth balance buttery spread (I use the sticks)1 c. granulated sugar1 c. brown sugar2 eggs1 tbsp. vanilla bean paste or vanilla extract 2 3/4 c. flour1 tsp. baking soda1 tsp. salt2 c. chocolate chips (I only use Guittard bittersweet, they are dairy free and hands down the best out there)
Preheat oven to 350.
Cream butter and sugar, slowly add both eggs, mix until fluffy and light, add vanilla bean paste or extract. Gently mix in flour, soda, 1 tsp salt and beat until combined, then add chocolate chips.
Drop on parchment-lined baking sheet by about 1 tbsp. bake for 10-13 minutes, depending on how soft or crunchy you prefer your cookies (10 or 11 for soft, 13 for crunchy).
