Tuna-Bean Tostada

4 oz (drained) albacore tuna in water 1 tbsp reduced fat sour cream1 can Canellini Beans (rinsed)Garlic, 4 cloves1 raw onions, sliced3 tbsp Extra Light Olive Oil.25 cup chopped red bell pepper .25 tsp seasoned salt (to taste)1 tsp black pepper2 tbsp chopped scallions8 raw Corn Tortillas (approx 6" dia) (remove).25 cup crumbled Feta cheese
Mix beans, tuna, chopped garlic, 1/4 of the sliced, raw onion and sour cream into a food processor. Pulse until smooth and creamy. Add salt/pepper to taste.
Carmelize the remaining onion in the Olive Oil. Cook until desired doneness (I prefer them quite well done, as you can see from the photo). Remove the onions from the pan and put 2 corn tortillas in to heat through and crisp up - repeat with remaining tortillas.
Spread 1/4 cup of dip on each tortilla. Add carmelized onions, diced red bell peppers, scallions and feta to complete the dish.
