Amal's Chicken & Spinach Soup

Ingredients
Water- 8-10 cups Chicken- 3 leg quarters (cut leg from thigh, will cook faster )Spinach- 1-2 frozen boxesOnion- 1-2 large slicedGarlic- start with 3 teaspoonsPepper-start with 3 teaspoonsSalt- start with 1 tablespoon
Directions

1.Place all but onions and spinach in water and bring to boil.
2.Reduce heat to medium and cover.
3.Cook until chicken is done, maybe an hour.
4.Remove chicken and place on a plate to cool.
5.Skim fat off of the broth.
6.Add Spinach and onions to broth and boil.
7.Remove skin and bones from chicken and tear chicken into smaller pieces.
8.Taste broth for saltiness, etc.
9.Add to boiling broth; reduce heat, cover, and simmer.

Serve whe ready or if you choose to make rice, serve when the rice is ready.

Makes about 10 large servings I think. We always have left overs so it's hard to tell!
