1 c. green bell pepper, diced1 c. red bell pepper, diced1 c. red onion, diced1 c. white onion, diced1 c. celery, diced1 can black beans, drained1 can pinto beans, drained1 can shoepeg corn, drained and rinsed1/2 c. apple cider vinegar1/2 c. extra virgin olive oil1/2 c. splenda
Dice all ingredients as indicated, mix in a bowl.
Bring oil, vinegar, and splenda to a boil, then pour mixture over vegetables. Stir, and chill.
