Fava Bean Salad

Ingredients
2 garlic cloves, minced1 T E.V.O.O.2 plum tomatoes1 oz feta, cubed, at room temp1 cup (about 1 lb unshelled) fava beansfresh dill, to taste3 black olives, pitteds/p to taste
Directions
Shell fava beans. Blanch for 1 minute, ice down and remove out shells of beans. Combine garlic and olive oil on very low heat in a deep skillet and allow garlic to infuse the oil. Toss in the tomatoes and increase the heat to medium low for about 30 seconds. Turn off heat, add rest of ingredients and toss to coat in oil. Serve with crusty bread (not included in Nutritional Info).
