Fresh Fried Okra, Onion, Pepper, Eggplant Mix

Ingredients
1 cup Onions, chopped1/2 cup Bell Peppers, chopped1 1/2 cup Okra, chopped1 1/2 cup Eggplant, pealed & chopped3 T cornmeal1/3 cup Canola OilSalt & Pepper to taste
Directions
Chop all veggies. Have oil hot and add onions & peppers. Mix half cornmeal wth okra, coatng well. Add to skillet. Add other half cornmeal to eggplant,coating well. Add to skillet. Stiring mixture often, Cook till tender and somewhat brown. Add salt & pepper to taste. This cooks down to 2 good size servings or 3 small servings
