Grilled Zucchini Boats

3 medium zucchini1/3 c. whole wheat bread crumbs1 jar hormel bacon pieces1 jalapeno pepper, chopped1 can (4oz) diced green chiles1/4 c. minced onion1 small tomato, diced1/2 c. shredded cheese of your choicesalt, pepper, basil, crushed red pepper, etc. to taste
1/2 zucchini = 1 serving (makes 6 servings total)
Preheat Grill.
Cut each zucchini in half length wise and place in boiling water 3-4 minutes. Scoop out pulp, chop, and squeeze water out using a strainer and paper towels.
In a bowl mix zucchini pulp with remaining ingredients except cheese. Season with salt, pepper, and your favorite spices to taste.
Stuff each zucchini half with the mixture and top with cheese. Place on grill on heavy layer of foil for 15-20 minutes or until tender and heated through.
