Oven roasted veggie side dish

Ingredients
3 yukon gold or red potatoes sliced medium1 medium zucchini sliced medium1 large onion sliced medium1 large bell pepper, sliced6 oz potabello mushrooms , sliced1 tbls extra virgin olive oil1 tsp garlic powder1 tsp italian seasoningsalt and pepper to taste
Directions
combine vegetables, coat with evoo and seasonings, place on cookie sheet
bake 400 degrees for 20 to 30 minutes or until browned and potatoes are soft
about 4 servings

    This was super easy and tasted great! I added carrots and the kids loved them. Potatoes should be cut up smaller because they do take longer to cook than other veggies. - 4/20/09
