Ingredients
Directions
*9 large Grade A eggs*Shredded Cheese (you pick the flavor). How much is up to your tastes.*Sausage (I used Hormel Pork, they have 0 carbs and are a bit sweet)*Mixed Vegetables (whatever kind you like!)*Broccoli (if you want, I couldn't find any packages that included broccoli)*Seasoning (I used Mrs. Dash Garlic&Herb)You will also need:*Non-stick 12 muffin tin, OR regular 12 muffin tin greased with spray or butter. Eggs WILL stick if you do not grease properly.*If you have a child helping, a stool for them*Large bowl to whisk the eggs in*1/3 cup measuring cup to scoop the eggs into the muffin tin*Make sure your "goodies" are cooked, baking the egg cupcakes will NOT cook anything but the eggs. This includes sausage, frozen veggies, or sauteed mushrooms!
This recipe makes 12 yummy cupcakes filled with goodies.
*Pre-heat the oven to 350
*Add all 9 eggs to your bowl (make sure they aren't still in their shells!)
*Beat the eggs until everything is well mixed
*Add any seasonings here. Some "goodies" are already salty, so you only need salt if your "goodies" have no salt. I use Mrs. Dash Garlic&Herb.
*Scoop with the 1/3 cup measuring cup, filling the muffin tin holes to about 3/4.
---If there is a child---
*Move the child's stool to the counter, then separate the "goodies" into small bowls. The child can then add the "goodies" to each muffin.
*Once your child is finished making the cupcakes yummy, double-check for continuity before sprinkling cheese on each cupcake. However much you want!
---If there is no child---
*Add your "goodies" to each muffin. It is acceptable to fill to the brim, as long as no egg sloshes over.
*Sprinkle cheese (if you want!) on each muffin, as much as you want. It may sink, depending on how many "goodies" you have added.
Once the cupcakes are good to go, set the tin in the pre-heated (to 350) oven. You'll need to wait about 10 minutes, at which point you can check to see if the top part of each cupcake is still runny. It may require up to 15 minutes, but check every minute, since eggs do cook fairly quickly.
Remove the cupcakes from the oven when they are ready, and place them somewhere cool (not a fridge or freezer) for 10 minutes until they are cooled off. You can remove them with a spoon (very carefully!).
---If there is a child---
Call the child over to taste-test the first cupcake. If they want frosting, suggestions are: Ketchup, Tabasco or Cream Cheese (or whatever you normally put on eggs).
---If there is no child---
Hey, more for you! Dig in!
Storage: It is recommended that you keep them in a tupperware container or freezer bag. They will keep in the fridge for up to 2 days, provided you don't eat them all. Store any you won't eat in the freezer.
Heating Up:
Fridge: 15-20s each (depending on microwave)
Freezer: 45-1m30s (depending on microwave)
Number of Servings: 12
