Single-Serving Sweet Potato Casserole

1 sweet potato, cooked, peeled and mashed1 tsp. vanilla paste (I use Neilsen-Massey's product and it's wonderful, but you are welcome to use extract)1 tbsp. butter, melted2 tsp. butter, melted1 whole egg, scrambled2 tsp. ground cinnamon1/2 tsp. ground nutmeg1/4 cup chopped pecans
Mix the mashed sweet potato with the vanilla paste, 1 tbsp. butter, and egg and scoop mixture into two small ramekins. Sprinkle the pecans evenly over each mixture and pour over the remaining 2 tsp. melted butter, 1 tsp. for each ramekin. Sprinkle on the spices and bake at 350 degrees for 25-30 minutes. Do not overbake or the nuts may burn.
