Banana Flaxmeal Muffins

Ingredients
1 1/2 cup whole wheat flour3/4 cup ground flaxseed1/2 cup raw sugar1 teaspoon baking soda1 whole egg1/2 cup oil 1 cup mashed bananas1 teaspoon vanilla extract2 Tbsp. plain yogurt1/2 cup chopped walnuts (optional)
Directions
In large mixing bowl, mix together flour, flaxseed, sugar, and baking soda. In separate bowl, mix egg, oil, bananas, vanilla, and yogurt. Mix wet into dry ingredients. Fold in walnuts. Use paper muffin cups or spray the muffin pans with non-stick spray. Bake large muffins 20-25 minutes (or mini muffins for about 15 minutes) at 350 degrees. Makes 12 muffins or 30 mini-muffins.

    I substituted half of the raw sugar for brown sugar and used chopped pecans instead of walnuts. Delicious! Love that they use so much flax. I also added a tiny bit of brown sugar crumble on top before baking. Very good! - 10/10/12

    Not too sweet but soo yummy and soft. I sprinkled a little bit of rolled oats on top in the place of nuts or icings. - 6/16/10
