Shredded Mexican Chicken

3 Chicken Breasts1/4 c Chopped onionWater2 Jalapeno Peppers, halved1/2 c sliced mushrooms1 Med Tomato, chopped3 cloves of GarlicGarlic Salt to taste
*Makes about 6 1/2 c. servings
Heat olive oil in skillet to medium-high
saute onions until brown
Add Chicken, mushrooms, Jalapeno, Garlic, and tomato, along with enough water to just cover the bottom of the pan.
Cover and Simmer on medium heat, stirring occasionally, and adding small amounts of water, as needed, until chicken begins to fall apart.
This usually takes about 40-50 minutes.
once the chicken begins to shred, stir, and cook until the water is gone, and you start getting a little brown glaze on the bottom of the pan.
Serve as a lettuce wrap or taco, with sour cream, cheese, and salsa.
