Chicken Cabbage Stiry Fry

2 lbs cabbage, shredded1 lbs onion, cut into strips1 lb celery, chopped1/2 Tbsp Extra Virgin Olive Oil1/4 cup Lite Soy Sauce2 lbs boneless skinless chicken breast, diced1/2 Tbsp Extra Virgin Olive Oil1/4 cup Lite Soy Sauce
Add 1/2 Tbsp Extra Virgin Olive Oil to hot skillet, brown chicken. Add 1/4 cup Lite Soy Sauce, stir and remove from heat.
When your chicken is about to be done, add 1/2 Tbsp Extra Virgin Olive Oil to hot pot (large enough to hold all veggies - they will cook down a bit if you need to add them gradually). Start with onions and then add rest of veggies along with remaining 1/4 cup Soy Sauce. Stirring frequently cook to desired crispness.
Remove from heat, add chicken and stir.

This recipe was so tasty!!! instead of using olive oil i sprayed the pan with butter flavor non stick spray, and instead of celery i used red bell peppers, me and my family like a little spice to our food so i added crushed red pepper flakes. I will DEFINITELY be making this again. THANKS!!! - 2/21/11

Thanks! I cook a large amount because I'm cooking for five, but you can always cut down, but if it helps: 2lbs cabbage = 1 reg size head, 1lb onions = 4 onions(approx) and 1lb celery = 1 reg stalk. I actually cut the cabbage into thin strips but I can't figure out how to edit it up there.

Loved this! I didn't use celery, though. I used a red bell pepper and sugar snap peas. Yummy! And a tip to anyone that reads: If you can find Pacific Island Soy Sauce, use it! Less sodium than even the low sodium soy sauces out there, and it has full flavor! - 6/25/10

Thanks! If the sodium is too high (which even with Lite Soy Sauce - Ye-ouch), it's also pretty good with a sprinkling of crushed Red Pepper instead.
