Crepes

Ingredients
1/2 cup milk1/4 cup freshly squeezed orange juice2 large eggs2 Tbsp Splenda2 Tbsp melted butter1/2 cup flourCooking spray
Directions
Wisk together wet ingredients, then add dry ingredients. Continue mixing until slightly frothy and well combined. Allow to chill in fridge for 30-120 minutes to allow air bubbles to escape batter.

Heat a nonstick skillet on medium heat, spray with cooking spray. Remove skillet from heat and add batter, 1/4 cup at a time, to skillet, swirling pan to create a very thin layer of batter, then replace on heat. Heat for approximately one to two minutes, until golden brown. Loosen edges with a butter knife and flip crepe. Continue heating for 15-45 seconds, until golden brown.

Top with your favorite fruit.

Makes 10 crepes.
