gluten free crepes

Ingredients
1/3 cup Corn Starch (gluten free), 2/3 cup Milk, nonfat (i made mine with lactose free milk),1 Egg, fresh, 2tsp Olive Oil, pinch of Salt,
Directions
mix all ingredients until well blended.
spritz a crepe pan with olive oil
pour a thin layer of batter into the pan while swirling the pan
cook 20-40 secondsuntil steam is puffing out sides
flip crepe with care and cook 15-20 sec more

my pan makes 4 large crepes

serve with your choice of filling, fruit and cream or scrambled eggs and bacon.
