Yellow Squash Cake

Ingredients
2 C flour1.5 C sugar1 C Veg Oil or apple sauce3 C shredded w/ skins squash1 tsp baking soda1 tsp cinnamon1 tsp salt1 C brown sugar1 C oatmeal3 eggs1 cup choppen pecans2 tsp baking powder1 tsp vanilla1/2 C raisins
Directions
Mix all ingrdients, use two loaf pans, grease & flour pans.

Bake @ 325 for 1 hour

Can use angel food or bundt cake pans as well and bake for 1 hour.

    This was excellent! I made it with the applesauce (no oil) and it came out very moist and dense with a nice chewy exterior. I wanted to make a nut-free version so I used a mix of chocolate chips and craisins. A great way to use the masses of summer squash that are trying to take over my garden!! - 7/8/11
