Zucchini and stewed tomatoes

Ingredients
1 can stewed tomatoes3 cups sliced zucchini1/2 cup chopped onion1/2 cup shredded cheddar cheese
Directions
Cook onion and zucchini in microwave safe dish for 10 minutes. Add stewed tomatoes and cook until vegetables are tender as you like. Put cheddar cheese on top and heat until melted. Can be made on top of stove or in the oven.

    This is a summer favorite with my family. I used the italian style diced tomatoes instead of stewed tomatoes and fresh shredded mozarella/parmesan cheese instead of cheddar cheese. - 8/24/11
