1 19.2 oz package 99% Fat Free Ground Turkey1 C Onion, chopped3 Tbl Chili Powder2 10 oz Cans Enchilada Sauce1 1/2 C Reduced Fat Shredded Mexican Cheese16 6" Corn Tortillas
Preheat oven to 375 degrees. Prepare an 13" x 9" x 2" baking dish with a light coat of no-stick cooking spray. In a medium skillet cook together turkey and onion until turkey loses pink color and onion is translucent. Remove from heat and drain any excess liquid. Add chili powder, 3/4 cup enchilada sauce and 1 cup cheese and mix well. Spoon enchilada filling onto individual tortillas. Roll up and place seam side down in baking dish. Pour remaining enchilada suace over top and sprinkle with remaining 1/2 cup cheese. Bake in preheated oven 15 to 20 minutes or until hot and cheese is melted. Makes 8 servings (2 enchiladas each).
