Morrocan Orzo

1/2 lb. Orzo3 cups Chicken Broth8 Dried Apricot halves ( chopped into 1/2" pcs.)1/4 cup Golden Raisins1/4 cup finely chopped Fresh Parsley1/4 cup finely chopped Fresh Mint3 Tablespoons finely chopped Fresh Chives2 Tablespoons Pine Nuts ( lightly toasted)
Put the chicken broth, raisins and apricots in a medium sauce pot. Bring to a boil, now add the orzo. Turn heat down to medium and softly boil for 8 - 12 minutes or until orzo is tender stirring every now and then. All of the chicken broth should be absorbed if not continue to cook until broth is gone. If the orzo becomes dry before cooking time is up then, add a little water to complete cooking.
After the Orzo is cooked take off the stove and add the parsley, mint, and pine nuts. Stir until well blended then serve hot.

This also reheats in the microwave very well.
