Wholegrain pancakes

Ingredients
1 C. quick cooking oats1/3 C. whole wheat flour1/3 C. yellow cornmeal1/3 C. wheat bran2 Tbsp flaxseed2 Tbsp brown sugar2 tsp baking powder1/4 tsp baking soda1/4 tsp salt1 3/4 C Milk - 1%
Directions
1. In food processor or blender, grind oats until powder forms.
2. In medium bowl, combine all dry ingredients and gently stir together. Add milk and mix until just blended. Batter should be runny. Set aside for a few minutes to thicken slightly.
3. Heat griddle or large, heavy skillet over medium heat. Spray with cooking spray. For each pancake, pour 1/4 to 1/3 cup batter onto the griddle or skillet. Cook until bubble appear on surface (about 3 minutes). Flip pancakes and cook approx. 3 more minutes.

Makes 10 pancakes.
