Guiltless Waffles w/Stewed Fruit

Breakfast Waffle2 eggs well beaten in a large bowl1/3 cup of non fat powdered milk6 oz. of fresh blueberries (or any berry)1/2 cup oat brancooking spray (alcohol free)1 tsp. canola oilSweetener (only sacchrin drops - optional)1/2 tsp. cinnamonUse a large waffle maker and start heating it up.Add oat bran, oil and dry milk to the beaten eggs in the bowl and mix well.Heat a small non stick skillet on medium high and place blueberries in it (or you can microwave them) add a little water and cook until the juices start to release. Place aside in the pan. (or keep in microwave bowl)Spray waffel maker with non stick spray.Pour mixture into the waffle maker. Spread out evenly and cook 2-3 minutes.Serve with fruit on top of the waffle for a complete breakfast.Serves: 1Note: Waffles can be made to then freeze. Reheat them in a toaster oven or microwave when ready to use.Enjoy!
