Gazpacho Salad

Ingredients
Dressing 2 garlic cloves, thoroughly crushed1 T EVOO1 T white balsamic vinegarJuice of a lemonSeasoning to taste - (I like a spice blend that has some kick, like Morton's Hot Salt or Tony Chachere's Cajun Seasoning)Veggies, all cut into roughly 1/2 chunks2 red ripe tomatoes1 yellow bell pepper, seeded1/4 large red onion1 medium cucumber
Directions
Whisk together the dressing ingredients in a medium bowl (that has a lid), until slightly emulsified. Add chopped veggies and toss thoroughly. Refrigerate overnight to allow the flavors to meld. Even better the 2nd & 3rd day!
