Tequila Lime Shrimp Salad

Ingredients
SALAD2 oz Organic Baby Spinach, stems trimmed2 Roma Tomatos, sliced1/2 cucumber, sliced1 cup of broccoli, chopped5 dried apricot pieces, choppedDRESSING2 Tbsp EVOO1 oz dark Tequila1 oz lime juice3 cloves garlic, minced1 tsp black pepper1 tsp cilantro1/2 tsp salt1 lb of large SHRIMP, deveined and cooked (cooks down to 8 oz)
Directions
(I marinated in extra tequila, lime juice, cilantro, and minced garlic - but drained this off, so I didn't add the ingredients in as calories.)

Mix dressing ingredients in shaker and shake, refrigerate until needed. Chop, slice, dice veggies and add to salad greens, placing all in large bowl.

Heat skillet on medium heat and spray w/ nonstick cook spray. Drain shrimp and add to skillet. Cook until just pink.

Toss dressing in to salad and top w/ shrimp.
