Terry's Jalapeno Zucchini Bread

1 1/2 Tablespoon Sugar1 Teaspoon Salt2 1/4 Teaspoon Dry Yeast4 Teaspoons Vital Wheat Gluten1 Cup Warm Water1 1/2 Tablespoon Olive Oil3/4 Cup Shredded Zucchini1 Large jalapeņo, Diced, Seedless1 3/4 Cup Bread Flour1 1/2 Cup Whole Wheat Flour
Mix 3/4 cups bread flour, salt, sugar, Vital wheat gluten and dry yeast with 1 cup warm water. Add oil zucchini, and jalapeno Mix. Add remaining flours. Kneed into smooth ball. Place into a oiled bowl, turning to coat, to rise for 60 minutes. Punch down and shape. Allow the dough to rise for an additional 60 minutes and then bake at 375 until browned.
