Ham and Chicken Carbonara

Ingredients
12 slices of Gwaltney 40% less fat bacon; fried Bacon grease, 6 tsp (reserved from frying)7.5 oz Ham, cubed15 oz Boneless/Skinless Chicken Breasts, cubed 1/2 box Barilla PLUS Thin Spaghetti 5 oz can of evaporated milk 3 Eggs 1/3 c Shredded Parmesan2 Tbsp Parsley1/4 tsp Pepper, black4 medium mushrooms 2 Tbsp Smart Balance w/ Flax Oil2 garlic cloves mincedCook pasta according to package directions. Drain; set aside.In a large skillet or electric frying pan over medium-high heat, fry bacon until crisp. Drain bacon on paper towels; crumble and set aside. Discard all but 2 tablespoons of the drippings.To skillet, add butter and saute garlic and chicken until chicken is cooked and browned. Add ham and cook for 3-4 minutes. Add cooked pasta, cooked bacon, 1/3 cup Parmesan cheese, dried parsley and 1/4 teaspoon pepper and toss until blended. Turn off heat. Beat eggs and milk until well blended in a bowl. Quickly pour over mixture in skillet, tossing constantly until pasta is coated and egg is set. Number of Servings: 6
