Strawberry Muffins

Ingredients
2 cups all purpose flour1 T baking powder1.2 tsp salt1/4 cup light (hard) butter or margarine, softened1/2 cup Splenda1/4 cup egg substitute1/2 tsp vanilla1,25 cups chopped, fresh strawberries1 cup strawberry yogurt (not fat free)
Directions
Preheat oven to 400 degrees

Serves 12

Measure 1st three ingredients into a large bowl. Make a well into the center and set aside.

Cream butter and splenda in a medium bow;. Add egg and vanilla. Beat well. Stir in berries and yogurt until well blended. Add to well in flour mixture. Stir just until moistened. Fill 12 greased muffin cups 3/4 full. Bake about 20 minutes until golden brown.
