Ingredients
Chicken Breast, no skin, 2 breast, bone and skin removed Goat Cheese, Soft, 1 oz Sun Dried Tomatoes, 1/4 cup Basil, 1 tbsp *Lemon Juice, 1/4 cup Butter, salted, 2 tbsp
Directions
Start by soaking Tomatoes in warm water for 10 minutes. When they are softened, removed them from the water and chop them finely. Cut Chicken Breasts in half than grill on BBQ or in a grill pan. Mince Basil. In a small sauce pan, combine Lemon Juice, Butter, Tomatoes, and Basil. Simmer gently for 3 - 5 minutes. Plate Chicken and top with 2 tablespoons of Goat Cheese, the drizzle with Butter Sauce. Salt & Pepper to taste.
