Ingredients
8 oz Turkey Sausage (Breakfast Style)8 oz Fresh Mushrooms, sliceddash Olive Oil (about 6 grams)1 medium Tomato, diced4 oz Goat Cheese, crumbled6 Eggs3 Egg Whites1/4 c Milk
Directions
Brown sausage in pan.

Cook mushrooms in another pan with the olive oil.

In a large bowl, mix sausage, mushrooms, tomato, goat cheese, eggs, egg whites, and milk. Put mixture into a muffin pan that has been sprayed with cooking spray. Cook at 350 for 15 minutes or until set and golden on top.

    Don't forget - don't crowd the mushrooms :) They cook up much crispier that way. And you could substitute munster or any mild cheese for the goat cheese if you needed to because of the cost. - 6/23/10
