Chinese Chicken Salad w/ dressing

1/4 c rice vinegar minced garlic2 tbsp soy sauce
Makes a salad for one.
Slice peppers and onions and cut chicken into cubes. Spray pan with oil and add chicken, peppers, and onions. Sprinkle with minced garlic, salt and pepper. Cook until peppers are soft and chicken is cooked through (approx 10 minutes). While chicken cooks, make a plate with greens (I use baby spinich), slices of zucchini, cut carrots, tomatoes, onions, and any other veggies you want on your salad (maybe mandarin oranges or whatever you want!). When chicken is cooked, top salad with peppers, onions, and chicken mix. Pour over dressing.
Dressing:
In a measuring cup, mix rice vinegar, soy sauce and sesame oil. Mix up before pouring over salad.
