Veggie Saute

Ingredients
add one cup of each:broccolicauliflowergreen beansmushroomseggplantzucchinicabbage1.5 cups of your favorite salsa.5 cups water1 tsp olive oil
Directions
using a large frying pan or wok, heat olive oil on medium high heat about 30 seconds. spread the oil around the base of the pan and add the broccoli, cauliflower, and green beans to the pan. add .25 cup of water to the veggies and cover for 4 minutes. Next, add the remaining vegetables and cover. cook until the vegetables are tender ( approximately 5 minutes) finally stir in salsa until all ingredients are hot.

this dish is great bu itsself or served in a warm corn tortilla.
