1c flaxseeds, ground1/2 c walnuts, ground3/4 c protein powder2 tsp baking powder1 tsp baking soda1 tsp cinnamon1/2 tsp salt4 tsp oil2 eggs2 tsp vanilla2/3 c zucchini, peeled and grated2/3 c ricotta cheese (part skim)grated zest of one orange1/2 walnuts, chopped
1. Line muffin tin with paper cups
2. Preheat oven to 350
3. In a small bowl, mix flaxseets, ground walnuts, protein powder, baking powder, baking soda, cinnamon and salt.
4. In a large bowl, mix eggs, oil, vanilla, zucchini, ricotta cheese, and orange zest.
5. Fold dry ingredients into liquid ingredients. Fold in chopped walnuts.
6. Pour into muffin tins and bake at 350 for 20-25 minutes.
