Gluten Free Banana Bread

Ingredients
2 cups Namaste Perfect Flour Blend1 tsp baking soda1/8 teaspoon salt1/2 cup canola oil3/4 cup sugar1/4 cup brown sugar2 large eggs3 bananas, mashed1/2 teaspoon gluten free vanillawalnuts (optional)
Directions
In a medium sized bowl, blend Namaste flour (or substitute), baking soda and salt.

In a large mixing bowl combine canola oil, sugar (or splenda), brown sugar, eggs, vanilla and mashed bananas. Blend until well combined. Slowly add the dry ingredients and stir.

Bake on 325F for 65-75 minutes, or until a toothpick inserted comes out clean. Let cool and slice. Delicious!

    You could try Dover Farm gluten free flour http://www.dovesfarm.co.uk/. I use them all the time with great results. I'm going to try this bread this weekend. - 6/24/10

    I would really like to try this, but not living in the US complicates things. Is Namaste Flour just a simple flour or is something else added, and if so, how will using a simple flour affect the end result?? - 6/24/10
