Teff Banana Pancakes

Ingredients
Flaxseed, 2 tbspBanana, fresh, 2 medium (7" to 7-7/8" long) *Silk, Light Vanilla Soymilk, 1.5 cupVanilla Extract, 1 tbspHoney, 1 tbsp Maple Syrup, 1 tbsp *Canola Oil, 2 tsp *Bob's Red Mill Teff Flour, 1.5 cup*Flour, white, 1 cup Baking Powder, 3 tsp Cinnamon, ground, 1 tsp Salt, 1/2 tEgg, fresh, 2 large
Directions
Put flaxseed in blender and grind until powdered. Add banana, soymilk, vanilla, honey, and 1 tsp of oil.

In a separate bowl mix flour, teff, baking soda, and cinnamon.

Add banana mixture to dry ingredients and stir until combined.

Drop by skant 1/4 cup full onto skillet to form 3 - 4" pancakes.

This tastes really great dipped in applesauce or yogurt. You could also make a fruit sauce on the stove with some fruit, juice, sweetener of your choice, and cornstarch. Cook until bubbly and thickened.
