Sweet and Sour Meatballs

Ingredients
1 lb ground turkey1 egg white1/4 c chopped onion1 tsp saltDash of pepper1 tbsp + 2 tbsp soy sauce1 tbsp + 2 tbsp corn starch1 can pineapple chunks, drained (save juice)1/2 c julienned bell pepper (optional)1 tbsp apple cider vinegar2 tbsp brown sugar3/8 tsp pure stevia powder6 tbsp water
Directions
1. Mix beef, onion, 1 tbsp corn starch, 1 tbsp soy sauce, egg white, salt and pepper together. Form into golf sized balls. Saute with non stick cooking spray until cooked through in a large skillet. Drain meatballs on paper towels.
2. Add bell peppers to skillet at this time, if desired, and saute until crisp tender. Remove from skillet and set aside.
3. If juice saved from pineapple does not equal at least 1 cup, add water to make it equal 1 cup. Pour pineapple juice into skillet meat was cooked in and bring to a boil. (The "yum yums" left over from cooking the meat takes this recipe "up a notch"!) While it reaches boiling point, whisk together vinegar, sugar, stevia, water, remaining soy sauce and remaining corn starch. Once juice boils, add soy sauce mixture and bring to a boil again.
4. Add pineapple chunks and meatballs to sauce and heat through. Serve over quinoa or brown rice if desired.

    Fantastic. I used 1 C. minced fresh pineapple w/ 1C. minced up peppers & fried together. I used pork cubes. No Brown sugar, used 6 pkgs Stevia. Delicious and will definitely make again. - 3/13/11

    Skipped the stevia since I didn't have any, but still tasted good. Next time I'll bake the meatballs to make it easier. We ate half and I put the rest in a freezer bag for another meal. My 11 year old LOVED it! - 10/28/08

    This was DELISH! I used half gr. beef, half gr. turkey and added in 1/2 cup each, green, red, orange and yellow bell peppers. I'd never heard of STEVIA powder, so had to go to the health food store. They're getting use to seeing me in there now! :-) - 8/25/07

    I tried to lighten up this a little by using 4% ground beef and baking the meatballs. I added 1/2 cup ketchup to the pineapple juice. I think it would be good to add some colored bell pepper chunks also. My family enjoyed it very much. - 7/9/07
