Fried Crispy Green Peas

Ingredients
Green Peas, whole, dried and soaked over night, 1 cup*Canola Oil, 2 tbsp *Kosher Salt, 0.25 tsp Curry powder, 1 tsp Black pepper, 0.25 tspRed pepper, 0.25 tspPaprika, 0.25 tsp
Directions
1. Drain water from the peas completly.
2. Heat oil in a wide pan on stove top and add the peas when oil is hot.
3. Put a lid on the pan for the first 10 to 15 min and fry the peas on high flame.
4. Now take away the lid form the pan and reduce the flame to?medium and fry the peas stiring constantly till crispy.
5. When crisp remove the peas; mix seasonings together and sprinkle over peas. Left over powder can be stored and used on other snacks as seasoning.
6. Cool and then store in an air tight container.


TIP: If for some reason the peas loose crispy ness if you have a microwave just put them in a safe plate and microwave for 3 - 4 min. When cool they are crisp again as fresh. Without microwave heat them up on stove top in a wide pan, then cool them to crisp.
