Sausage, Veggie and Cheese Breakfast Cups

Ingredients
3 Morningstar Farms Breakfast Patties1 cup diced zucchini1/2 cup diced onion2 cups Egg Substitute1 1/2 cups sliced mushrooms1/2 cup shredded reduced fat cheddar cheese1 package (10 oz) frozen spinach, defrosted and drained
Directions
Preheat oven to 350 degrees. Spray 18 foil cupcake liners and put in muffin tins. Or spray non-stick muffin tins.
Warm breakfast sausage in microwave until defrosted. Cut up into small pieces and put in large bow. Add all other ingredients. Divide among 18 muffin cups evenly.
Bake for 20 minutes, or until egg is set.
