Corn muffins high fiber

Corn meal, all purpose wheat flour, salt, 3 tablespoons baking powder, flaxseed meal, Splena, milk, egg, olive oil, cooking spray
Preheat oven to 375 F. Spray muffin tins with cooknig spray.
Mix cornmeal, wheat flour, salt, flaxseed meal, baking powder and Splenda in a bowl.
Mix milk, egg, and olive oil. Add wet mixture to dry ingredients and mix just enough to moisten. Be careful not to overwork the batter. Pour into muffin cups. Bake at 375 F for 20 minutes.
Makes 12 muffins.
