300g potato, peeled100g mushrooms, chopped80g leeks, chopped10g butter50g low-fat cheese, gratedsalt and pepper
Peel potatoes, then boil until soft. Drain, then mash with the milk.
Saute the mushrooms and leeks, chopped, in the butter, then add to the potato mixture.
Season to taste, then pour into an oven-proof dish and cover with the cheese.
Bake in a medium oven until the cheese is bubbling and starting to brown.
