Ingredients
1/2 cup old fashioned oatmeal, uncooked1/2 cup canned pumpkin1 cup nonfat milkPinch of ground cardamom1/4 tsp pumpkin pie spice1 tbsp sugar
Directions
Mix all ingredients.
Cook over low heat for 20 minutes, or until thick.

    I've been making this for ages in the microwave, but I use Splenda, pumpkin pie spice, & a dash of salt. For the leftover pumpkin, measure 1/2 cup portions, then place on a baking sheet lined with parchment paper. Put in freezer, when frozen, place in freezer bag, & it's ready when you want it. - 6/17/08

    This is a new twist on oatmeal!! This tastes as good as a cookie!!! I loved it and it has a lot of "superfoods" benefits. I also added flaxseed just for a little Omega 3 punch to the recipe...little bit of a nutty flavor added!! YUM!!!! I will be making this again!!!! - 8/1/08

    This was SO GOOD. I changed it a little--you do use the 1/2 C. oatmeal and milk, but I added 1/4C of canned pumpkin, and used 1/4 t. cinnamon, 1/8t. nutmeg (ground), and 1/8 t. ground cloves, and splenda instead of sugar. The recipe actually makes just 1 serving, according to the oatmeal package. - 4/9/09

    Instead of cooking this on the stovetop I put it all in a microwave safe bowl and cooked it on HIGH for 2 1/2 minutes. Worked like a charm! - 12/10/07

    I'm a pumpkin-a-holic and I really liked this recipe.I got the cardamon powder at a health food store in bulk packaging.I added 1 tbl.of flax meal at the end of cooking.....Chef Jim will make this again and again. - 6/17/08

    I have found that using 'pumpkin butter' is easier and it is already spiced...just look for ones with minimal or no sugar...I use it when I make pumpkin pecan pancakes too and the consistency is much smoother and you can pop the leftover 'butter' in the fridge and use on muffins, etc later on. - 3/12/09

    I agree with a lot of the comments that the nutrition count is off. I changed mine a tiny bit by using only 1/4 cup of canned pumpkin, splenda instead of sugar, and cinnamon. I got 261 cals ! Ands its only 1 serving so you can enjoy the whole thing :) - 1/26/11

    Yummy! This really hits the spot on a cold rainy day! I used water in place of the milk and made the oatmeal as directed on container. Then added the pumpkin and spices w/ a little brown sugar. Will definitely make again and again! - 4/20/09

    This was very good....but I have since I am always prepping for one and I don't like the taste of reheated oatmeal, I have started using 1/2 cup of oatmeal, add 1 tbsp of dry milk, 1/2 tsp of pumpkin pie spice, 1-2 tsp splenda and 1-2 tbsp raisins and mixing it together and then adding boiling water - 11/24/10

    Great simple and easy. I couldn't afford the cardamon so I used cinnamon instead and plain soy milk instead of fat free milk. It was great thanks for the suggestion. - 6/18/08

    I didn't have any cardamom so I used ginger instead. I also added a spenda for extra sweetness. Good results and tasty. - 4/6/07

    This was interesting. I used 1/2 cup oats & 1/4 cup pumpkin. I added some chopped pecans on top. It definitely had a pumpkin taste, so if you don't like pumpkin don't try this! I might try next time with steel cut oats instead. The texture of this was pretty mushy. - 3/11/10

    Very good. Ground Cardamom was pretty expensive so i used a bit of nutmeg instead. The nutmeg I bought was a bit grainy. I'll probably just use the pumpkin pie spice in the future. - 10/23/07

    I made it with a few raisins and had it with soy milk and a tablespoon of chopped nuts on the top. Fantastic! And the calories ARE calculated incorrectly, so it's actually lower in calories than it shows here.

    Excellent idea, and easy to adapt. I don't tend to have a lot of pie spices around, so I just bought the pre-spiced/sweetened pumpkin in a can. So delicious! - 6/30/08
