Chicken and cheese quesadillas

Ingredients
4 chicken breasts3/4 cup reduced fat sour cream8 8-inch flour tortillas1 cup sharp cheddar cheese (any kind of cheese works-this is our favorite) oil to fry quesadillas inMexican seasoning, if desiredChopped onions and peppers, if desiredAdditional sour cream and salsa for condiments
Directions
Cook chicken. You can add any kind of seasoning you want during the cooking process. We're pretty plain in our family, so I didn't list any seasoning but it would be easy to add. Sauteed onions and/or peppers would also be easy to mix in. Cut chicken up in food processor. Add to sour cream and cheddar. Spoon enough of the mixture onto one tortilla until you can spread it within 1/2 inch of the edge. Don't spread it too thin. Top with second tortilla. Fry in oil over medium heat 'till just browned and filling is melting. Watch carefully-they don't take long to brown (or burn!)
